Lemon Cream Pie

Ingredients

  • 3/4 C sugar
  • 13/4 C milk
  • 1 t. salt
  • 3 T cornstarch
  • 2 T flour
  • grated rind of lemon
  • juice of 2 lemons
  • 2 eggs

Directions

  1. Sift dry ingredients

  2. Add milk and cook in double boiler til thick. Add egg yolks, slightly beaten and cook 1 min. longer. (remove from fire before adding yolks).

  3. After adding yolks, add lemon juice and rind. Cool and fill baked pastry shell.

  4. Beat egg whites stiff, allowing 1 1/2 T sugar for each egg white and a dash of salt.

  5. Add sugar when stiff. Spread on pie.

  6. Brown slightly in 350 oven.
