Peachy Chicken

Ingredients

  • 16 oz can peaches, drained, save liquid
  • 2.5 lbs chicken
  • 1/4 c orange juice concentrate
  • 1/4 c malt vinegar
  • 1 tbsp brown sugar
  • 1 tbsp basil
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp pepper
  • 2 tbsp cornstarch
  • 2 tbsp water
  • Rice

Directions

  1. Brown chicken.

  2. Combine peach liquid, orange juice, malt vinegar, brown sugar, basil, salt, cinnamon, and pepper.

  3. Cook, covered, over med for 25-30 minutes.

  4. Add peaches.

  5. In a small bowl mix together cornstarch and water. Stir into sauce, heat to thicken.

  6. Serve over rice.
