Chicken Paillards with Herb-Tomato Salad

Ingredients

  • 1 ripe medium tomato
  • 1 clove garlic, peeled and smashed
  • 1/2 scallion thinly sliced
  • 1 1/2 tablespoons extra-virgin olive oil
  • 1 teaspoon red wine vinegar
  • 1 teaspoon kosher salt
  • Freshly ground black pepper
  • 1/6 cup torn fresh basil
  • 1 1/2 tablespoons fresh tarragon
  • 1 1/2 tablespoons fresh flat-leaf parsley
  • 2 chicken paillards, about 6 ounces each

Directions

  1. Prepare a grill or grill pan on high heat.

  2. tomatoes, garlic, scallion, the 1.5 tablespoons olive oil, vinegar, the 1 teaspoons salt, and black pepper to taste in a medium bowl.

  3. Add herbs to bowl without tossing.

  4. Brush chicken with olive oil, salt, and pepper.

  5. Grill chicken for about 2 minutes each side.

  6. Stir herbs into salad and place on chicken.
