Scallion Sweet Potatoes

Ingredients

  • 3/4 chopped peeled sweet potatoes
  • 1 small bunch scallions (cut into 2-inch pieces)
  • 3 crushed garlic cloves
  • 1/2 tablespoon fresh thyme
  • 1/8 cup olive oil
  • Salt
  • Pepper

Directions

  1. Combine chopped peeled sweet potatoes, 1 bunch scallions (cut into 2-inch pieces), garlic cloves and fresh thyme in a bowl.

  2. Drizzle with olive oil, season with salt and pepper and toss.

  3. Place on a sheet of foil and fold up.

  4. Grill over low heat until the potatoes are tender, 20 to 25 minutes.
