Chopped Greek Salad

Ingredients

  • 1 1/2 quartered tomatoes
  • Fresh oregano
  • 1 tablespoons capers
  • 1/2 tablespoon sliced pickled peppers
  • 1 1/2 tablespoons olive oil
  • Salt
  • Pepper
  • 1/2 cup watercress
  • 2 tablespoons sliced scallions

Directions

  1. Toss quartered tomatoes, some fresh oregano, capers (with 1 1/2 tablespoons of the liquid), sliced pickled peppers (with 1/2 tablespoon of the liquid), 1 1/2 tablespoons olive oil, and salt and pepper.

  2. Toss in watercress, sliced scallions and pitted Greek olives.
