Roasted Bell Peppers with Basil

Ingredients

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 tablespoons sliced garlic
  • 2 tablespoons olive oil
  • 1 tablespoon fresh basil
  • 1 tablespoon lemon juice
  • Salt
  • Pepper

Directions

  1. Halve, stem and seed bell peppers.

  2. Broil, cut-side down, until blackened, 5 minutes.

  3. Place in a bowl, cover and cool; peel and cut into pieces.

  4. Saute sliced garlic in olive oil; drizzle the oil over the peppers.

  5. Top with basil, lemon juice, salt and pepper.
