Roasted Sweet Potato Wedges

Ingredients

  • 1 medium sweet potatoes, peeled
  • 1/2 Tbsp olive oil
  • 1/4 tsp curry powder
  • 1/8 tsp ground cumin
  • 1/16 tsp ground cloves
  • 1/4 tsp salt
  • 1/8 tsp pepper

Directions

  1. Preheat oven to 425° F.

  2. Cut sweet potatoes in half lengthwise and then each half into 6 wedges.

  3. Combine all ingredients in a bowl. Toss gently to coat.

  4. Place wedges on a baking sheet so they do not overlap. Bake until very tender.

  5. Serve.
