Italian Baked Cod

Cook time: 10 minutes
Serves 2 people

Ingredients

  • 1/4 cup onion, chopped
  • 1/2 Tbsp black olives, sliced
  • 1/2 tsp garlic, minced
  • 1/2 tsp basil
  • 1/2 Tbsp olive oil
  • 6 oz cod fillets
  • 1 can (14 oz) tomatoes, diced

Directions

  1. Preheat oven to 450° F.

  2. Sauté onions and garlic in oil.

  3. Add tomatoes, olives, and basil.

  4. Simmer until thickened, about 10 minutes.

  5. Place in non-stick baking dish. Top with cod fillets.

  6. Bake covered about 10 minutes until fish flakes easily.

  7. Serve.
