Spinach with Pineapple, Apple, and Feta

Ingredients

  • 1 1/2 tablespoons balsamic vinegar
  • 1 1/2 tablespoons water
  • 1 tablespoon honey mustard
  • 1/2 clove garlic, minced
  • Black pepper, freshly ground to taste
  • 3 cups spinach leaves
  • 3/4 cups canned pineapple chunks in 100% juice, drained
  • 1 medium Red Delicious apples, cored and thinly sliced
  • 1/2 small red onion, thinly sliced
  • 2 tablespoons feta cheese, crumbled

Directions

  1. In a small bowl whisk together the vinegar, water, mustard, and garlic; season with pepper, if desired.

  2. In a large salad bowl, toss the remaining ingredients.

  3. Drizzle the vinaigrette on top and toss gently until evenly coated.
