Flexible Granola

You can use any kind of nuts you want and vary the amount. Dried fruit can be added after the toasting, if you like that in your granola.

Ingredients

  • 5 cups rolled oats
  • 2 cups mixed raw nuts (I use pignoli, cashews, pecans, almonds, etc)
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup or honey or agave
  • 1 Tablespoon vegetable oil
  • 2 teaspoons of extract (vanilla, almond, whatever you like)

Directions

  1. Preheat oven to 275 degrees.

  2. Mix oats and nuts in a big bowl.

  3. Put brown sugar, syrup, and oil in a microwaveable bowl. Microwave for 30 seconds Stir until the sugar has dissolved, and then stir in the extract. Pour on the oat-nut mixture and use some of the oats to help scrape out the last of the sweetness. Mix in thoroughly until all the oats look damp.

  4. Turn everything out onto a half-sheet pan and spread into an even layer across the pan. Bake at 275 for 20 minutes, then take it out of the oven, stir, and put back in for another 20 minutes or until it smells toasted.

  5. Cool completely, add dried fruit if you want it, and then store in an air tight container.
