Goat Cheese Mac & Cheese

Ingredients

  • 3/4 lb pasta
  • 1 1/2c half & half
  • 3 tbsp sweet onion
  • 2 minced garlic cloves
  • 2 tbsp flour
  • 5oz goat cheese
  • 3oz sharp white cheddar
  • 1/2c parm-reggiano
  • 2 tbsp light sour cream
  • 3/4 tsp lemon zest
  • S&P
  • thyme
  • 1 extra large egg yolk

Directions

  1. Preheat the oven to 400 degrees. Butter a 10-inch cast iron skillet.

  2. Cook pasta. Drain & return to pot.

  3. In a large saucepan, simmer cream, onion, garlic. Transfer 1/2c liquid to bowl, whisk in flour and return to saucepan. Thicken/whisk 3 min.

  4. Remove from heat, add goat cheese, cheddar and half the parm until melted. Stir in sour cream, zest and seasoning.

  5. Add yolk to bowl, whisk in 1/2c cheese sauce, and back to saucepan. Pour sauce over pasta.

  6. Transfer to a skillet, sprinkle with remaining parm, and bake 25 min. Stand 5 min. Sprinkle with fresh thyme is desired.
