Mexican Pulled Pork

Ingredients

  • Pork roast
  • 1 can tomatoes (any flavor or plain)
  • 1 jar salsa
  • lime juice or garlic optional

Directions

  1. Put pork roast in crock pot. Dump tomatoes and salsa over roast. I like to add fresh lime juice (usually a whole lime) and minced garlic if I have some, but can add flavored salsa or tomatoes, or eliminate limes and garlic. I don’t really measure, I just put in what I have. Let cook on low for a min. of hours of 3 hours on high (the longer it cooks, the more tender it will be). Can serve on tortillas with fixings, and with rice and/or beans.
