Butternut Squash Brownies

Ingredients

  • 1/2 cup butternut squash puree
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 2/3 cup flour
  • 1/2 cup cocoa
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup chocolate chips

Directions

  1. Preheat the oven to 350°. Grease an 8-inch square pan with nonstick spray.

  2. In a large mixing bowl combine the puree, eggs, and vanilla.

  3. Stir in the sugar and combine well.

  4. Add the flour, cocoa, baking powder, salt, and cinnamon.

  5. Stir well to blend.

  6. Stir in the chocolate chips.

  7. Spoon the batter into the prepared pan and bake for 25 to 30 minutes or until baked through.

  8. Cool on a rack before serving.
