Salad Ideas

FMA-friendly salads

Ingredients

  • Leafy green (spinach, romaine, arugula, butter lettuce, boston lettuce--just no iceberg lettuce!)
  • Cheese (of all varieties, except those that are flavored with fruits, veggies or herbs)
  • Nuts (again, all varieties with the exceptions of cashews and pistachios, as long as they are not seasoned beyond salt)
  • Chow mien noodles
  • Bell peppers
  • Beans of any kind (as long as plain, unseasoned)
  • Chickpeas
  • Fruit (Ok salad fruits: strawberries, blueberries, cranberries and crazins, kiwi, lemon, lime, peaches, nectarines, plums, grapes. Salad fruits to avoid: Apples, pears, mango, oranges)
  • Meat (chicken, turkey, hard-boiled eggs)
  • Herbs
  • Grains (couscous, quinoa)
  • Salt and pepper
  • Green onions (green parts only!)
  • Salad dressing (use recipes listed in my recipe box, or mixture of olive oil and any type of vinegar with spices listed above)

Directions

  1. Put together a fun combo of the above ingredients! Some good combos include:

  2. Spinach strawberry salad, with pecans and a sweet poppy seed dressing (see recipe for dressing in my recipe box)—a Ben favorite!

  3. Basil and fresh mozzarella salad: romaine with fresh basil and fresh mozzarella, plus green bell pepper and chow mien noodles for crunch. Tossed with olive oil vinegar/salt/pepper vinaigrette—also a Ben favorite!

  4. Mediterranean salad: lettuce with feta, chickpeas, green bell peppers and creamy tahini dressing (not the sweet dressing).
