Cowboy Meatloaf and Potato Casserole

Ingredients

  • 1 1/2 lean ground beef
  • 3/4 cup onions
  • 1/3 seasoned bread crumbs
  • 1 egg, slightly beaten
  • 1/4 cup BBQ sauce
  • 1 pkg taco seasoning
  • 1/2 tsp salt
  • 3 cups mashed potatoes
  • 2/3 evaporated milk
  • 1 Tbsp butter
  • 1/2 cup real crumbled bacon
  • 1/2 cup French fried onions
  • Salt and ground black pepper
  • 1 cup Mexican cheese blend, shredded

Directions

  1. Preheat oven 375 degrees. In large bowl, combine ground beef, onions, bread crumbs, egg, BBQ sauce, taco seasoning, and 1/2 tsp salt. Mix thoroughly, then press into bottom of 9×9 baking pan. Bake for 20-25 mins or until cooked thoroughly. Carefully pour off drippings.

  2. Meanwhile, make homemade mashed potatoes or warm store-bought. Mix in milk, butter, bacon, and fried onions. Season with salt and pepper.

  3. Spread potatoes over meatloaf. Sprinkle with cheese. Return to oven for 15 mins.
