Butterscotch muffins

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1 (3.4 oz) pkg instant butterscotch pudding
  • 1 (3.4 oz) pkg instant vanilla pudding
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup water
  • 4 eggs
  • 3/4 cup oil
  • 1 tsp vanilla
  • Topping:
  • 2/3 cup brown sugar
  • 1/2 cup chopped pecans
  • 2 tsp ground cinnamon

Directions

  1. In large bowl, combine flour, sugar, pudding mixes, baking powder and salt. Combine water, eggs, oil, and vanilla. Stir into dry mix just until moist. Fill greased or paper lined muffin cups to 2/3 full.

  2. Combine topping ingredients and sprinkle over batter. Bake at 350 degrees for 15-20 mins. Cool for 5 mins before removing from pans to cool.
