Coconut Cream Pie

Ingredients

  • 3 3/4 cup milk
  • 1/2 c corn starch
  • 2 dash of salt
  • 2/3 cup sugar (heaping)
  • 1/4 cup milk
  • 2 eggs, beaten
  • 3 Tbsp butter
  • 1 cup coconut
  • vanilla
  • 1 1/2 pkg graham crackers (approx 2 cups)
  • 3 Tbsp sugar
  • 1/3 cup butter
  • 1 cup coconut, broiled
  • 8 oz cool whip

Directions

  1. Make crust for 9×13 pan by mixing graham cracker crumbs, sugar and butter. Press into pan.

  2. In bowl, dissolve cornstarch in 1/4 cup milk. In saucepan, place remaining milk with sugar and salt. Pour beaten egg into sauce pan. Pour cornstarch mixture into pan. Boil until thick and then add 1 cup of coconut and some vanilla.

  3. Pour over crust. Once cool top with cool whip. Broil 1 cup of coconut and top dessert with it.
