Double Tomato Bruschetta

  • 6 Roma tomatoes, chopped
  • 1/2 cup sundried tomatoes, packed in oil
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 Tbsp balsamic vinegar
  • 1/4 cup fresh basil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup goat cheese
  • 1 French baguette


  1. Preheat oven on broiler setting. In large bowl, combine Roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt and pepper. Allow for mixture to sit for 10 mins. Cut baguette into 3/4 inch slices. On baking sheet, arrange on baking sheet. Broil for 1-2 mins until slightly brown. Spread goat cheese over slices. Divide tomato mixture evenly over slices. Broil for 5 mins and serve.
