Bagels

Ingredients

  • 8 cups of flour (the last time I made this we did 5 white, 3 wheat, and it was perfect)
  • 2 TB yeast
  • 3/4 TB kosher salt
  • 1/3 cup honey
  • 3 cups water
  • 1/2 cup brown sugar
  • Butter for greasing
  • Toppings as you please

Directions

  1. Using a kitchenaid combine 4 cups flour, all of the water, yeast, honey and salt.

  2. When thoroughly mixed, add the other four cups of flour one at a time, stirring well until thoroughly mixed.

  3. When the dough comes together, empty it into a large, well-greased bowl. Take a cookie sheet and flour it, then turn the bowl over onto the cookie sheet (now the cookie sheet holds the dough and the bowl is the lid). Leave this way until fully risen, about 45 minutes.

  4. Flour cookie sheets and form bagels, placing them with a good inch separating bagel from bagel. Let them rise in formation for about 30 minutes.

  5. Meanwhile, fill a large pot with water and add the 1/2 cup brown sugar, then boil.

  6. Preheat the oven to 400 degrees.

  7. When the bagels have been rising for 30 minutes, and when the water is at a good boil, get a slotted spoon and a drying rack.

  8. Take the bagels one at a time and put them in the water for 7 seconds, then flip, wait 7 seconds and then put on the drying rack.

  9. When you have enough to fill a cookie sheet, do so, then bake on 400F for about 15 minutes, maybe less. Don’t flip them.

  10. Cool, top, consume.
