Cauliflower cheese-style gnocchi

Ingredients

  • 400g gnocchi
  • handful of cauliflower florets
  • handful of broccoli florets
  • handful cherry tomatoes, halved
  • 275ml cheese sauce
  • grated Pecorino or Parmesan, to scatter

Directions

  1. Cook the gnocchi according to packet instructions.

  2. Meanwhile, preheat the grill to high. Cook the cauliflower and broccoli in boiling, salted water for 5 minutes. Drain the gnocchi and vegetables, then mix together in a shallow, heatproof dish. Scatter over the tomatoes then season to taste. Heat the cheese sauce, then pour over the gnocchi and vegetables. Scatter with grated cheese, season with black pepper and pop under the grill until golden and bubbling.
