Baked Spinach-Ham Frittata

Ingredients

  • 8 eggs
  • 1/3 cup low-fat milk
  • 1/4 teaspoon dried basil, crushed
  • 1/8 teaspoon black pepper
  • 1/4 cup chopped onion
  • 1 tablespoon extra-virgin olive oil
  • 1 10-ounce package frozen chopped spinach, thawed and well drained
  • 2 ounces thinly sliced, cooked ham, chopped
  • 1 tablespoons grated reduced-fat Parmesan cheese

Directions

  1. In a medium bowl beat together eggs, milk, basil, and pepper. Set aside.

  2. In a 10-inch ovenproof skillet cook onion in hot oil until tender. Remove from heat. Stir in spinach and ham. Pour egg mixture over spinach mixture in skillet. Bake, uncovered, in a 350° oven for 15 to 18 minutes or until a knife inserted near the center comes out clean.

  3. Sprinkle with Parmesan cheese. Cover and let stand for 5 minutes before serving.
