Coconut Lime Curry

Ingredients

  • 1/2 cup chopped onions
  • some olive oil
  • 1 1/2 lbs. boneless chicken or pork, chunked
  • 1-2 T. lime juice
  • 2 t. red curry powder
  • 1 t. garlic salt
  • 1 t. ground ginger
  • 1/2 t. coriander
  • 1/4 t. turmeric
  • 2 t. sugar
  • 1/2 lb. potatoes, chunked
  • 2 bell peppers, chopped
  • 2 cups coconut milk

Directions

  1. Sauté onions in a little olive oil on medium heat.

  2. Add meat, stir well.

  3. After 5 minutes, add lime juice, curry, garlic salt, ginger, coriander, turmeric, and sugar.

  4. Then add the peppers and potatoes, stir and cook for about 5 minutes.

  5. Add coconut milk, simmer for 15 minutes.

  6. Serve over rice.
