Stuffed French Bread Pizza

Ingredients

  • 1 10 oz. pkg. frozen chopped spinach
  • 1 loaf french bread
  • 1 Tbsp. EVOO
  • 1 lb. sweet Italian sausage
  • 1 red bell pepper, seeded and chopped
  • 3 large cloves garlic, minced
  • salt and pepper
  • 3/4 cup grated parmesan
  • 8 oz. sliced pepperoni
  • 16 oz. mozzarella, shredded
  • 1 tsp. dried oregano

Directions

  1. eheat oven to 425.

  2. Defrost spinach in the microwave, about 6 min. on high defrost.

  3. Wring spinach in a clean kitchen towel to remove as much moisture as possible.

  4. Split the bread in half lengthwise and hollow it out.

  5. Cut in half across, making 4 shells for pizzas. Place on a cookie sheet.

  6. In a medium skillet over med-high heat, add EVOO, then sausage. Brown and crumble sausage.

  7. Add bell pepper and garlic. Cook 3-5 min., then add spinach.

  8. Remove mixture from heat and season with salt and pepper.

  9. Transfer to a bowl.

  10. Combine sausage mixture with parmesan and pepperoni.

  11. Fill pizza shells evenly with mixture and top with shredded mozzarella cheese.

  12. Bake until cheese melts and bread is crisp, 10-12 min.

  13. Top pizzas with dried oregano.
