Whole-Wheat Spaghetti with Broccoli and Sun-Dried Tomatoes

Serves 2 people

Ingredients

  • 1 tsp. Extra Virgin Olive Oil
  • 2 cloves garlic, minced
  • red pepper flakes
  • 2-3 sun-dried tomatoes packed in oil, drained and sliced
  • 1 c. organic broccoli, cut into florets
  • 2 c. Whole-Wheat Spaghetti, cooked (reserve 1/2 c.water from cooked pasta)
  • 1/2 jar Wild Oats Organic Funghi Pasta Sauce
  • 1 Tbsp. organic capers, drained
  • 2 Tbsp. Parmesan cheese, shredded

Directions

  1. Heat oil in large pan over medium heat.

  2. Add garlic and red pepper flakes.

  3. Don’t let garlic burn.

  4. Add tomatoes and broccoli.

  5. Sauté for a minute.

  6. Add pasta water, cover and cook for 4 minutes.

  7. Stir in pasta.

  8. Add sauce and capers.

  9. Toss to coat evenly.

  10. Cook 2 minutes longer.

  11. Divide into two servings and garnish with Parmesan cheese.
