Thai Coconut Curry

Prep time: 10 minutes
Cook time: 10 minutes
Serves 4 people

Ingredients

  • 1 red onion, sliced
  • 2T Gourmet Garden Fresh Thai Blend
  • 200ml lite coconut milk
  • 400g green prawns
  • 4C vegetables, sliced eg: carrots, broccoli, cauliflower, beans, zucchini

Directions

  1. Stir fry onion.

  2. Add Thai blend, cook 1 minute.

  3. Add coconut milk and prawns, cook 1 minute.

  4. Add vegetables, cook further 3-5 minutes.

  5. Serve on cooked rice or noodles.
