Steamed Fish Parcels with Coconut Rice

Ingredients

  • For Fish Parcels:
  • 4 fillets firm fleshed fish
  • 1 clove garlic
  • 2t grated ginger
  • 1t fish sauce
  • 2t sesame oil
  • 1/2 red chilli, finely chopped
  • 2 spring onions, finely sliced on diagonal
  • coriander leaves and lime quarters to serve
  • For Coconut Rice:
  • 2C Basmati rice, washed and drained
  • 1C coconut milk
  • 1C water

Directions

  1. Fish Parcels:

  2. Grease 4 pieces of baking paper or foil.

  3. Lay fish on each.

  4. Sprinkle with parcel ingredients.

  5. Season with salt and pepper, seal parcels.

  6. Cook in oven at 180o approx 8 minutes, until fish is cooked.

  7. Serve with coriander leaves, lime wedges and coconut rice.

  8. Coconut Rice:

  9. Put rice, coconut milk and water into saucepan.

  10. Bring to boil.

  11. Cover tightly, turn heat to lowest setting.

  12. Cook 20 minutes without uncovering.

  13. Stand further 10 minutes.

  14. Season.
