Sticky Date Pudding with Toffee Sauce

Ingredients

  • 225g dates, chopped
  • 1t bicarbonate of soda
  • 200ml boiling water
  • 85g butter
  • 70g caster sugar
  • 2 large eggs
  • 170g self raising flour
  • 1/4t mixed spice
  • 1/4t cinnamon
  • 2T cocoa
  • 2T natural yoghurt
  • For Sauce:
  • 115g butter
  • 115g brown sugar
  • 14oml cream

Directions

  1. Put dates in bowl with bicarb soda, cover with boiling water.

  2. Stand until softened, drain.

  3. Puree date mixture.

  4. Cream butter and sugar until pale.

  5. Add eggs, and dry ingredients, mix well.

  6. Fold in yoghurt and date puree.

  7. Pour into buttered ovenproof dish.

  8. Bake at 180oC for 35 minutes.

  9. While pudding is cooking, make Toffee Sauce:

  10. Put butter, sugar and cream in saucepan and cook over low heat until sugar is dissolved and sauce has thickened and darkened in colour.

  11. To serve:

  12. Pour sauce over cooked pudding.
