Asian Salmon Parcels

Serves 4 people

Ingredients

  • 600g fresh salmon fillet
  • 2T soy sauce
  • 2t sesame oil
  • 2T oyster sauce (optional)
  • 1t fresh ginger, grated
  • 1 clove garlic, crushed
  • 2 spring onions, finely sliced
  • 1 - 2 red chillies, deseeded and diced
  • handful basil, chopped
  • 8T coconut cream

Directions

  1. Cut salmon into 4 pieces, place on squares of greased foil.

  2. Mix soy sauce, sesame oil, oyster sauce, ginger & garlic, brush over fish.

  3. Spread spring onions & basil over fish.

  4. Pour 2T coconut cream over each parcel, seal.

  5. Bake 10 minutes at 180oC.

  6. Serve hot or perfect at room temperature.

  7. Nice served with mashed potatoes or rice.
