Nutty Noodles

Serves 2 people

Ingredients

  • 3 ounces whole wheat spaghetti
  • 5 ounces broccoli spears
  • 1/2 cup baby carrots
  • 1/2 ounce soy sauce
  • 1/2 tablespoon natural peanut butter
  • 1/2 teaspoon sriracha sauce
  • Pre-cooked protein of your choice:
  • 1 cups shelled edamame
  • 6 ounces cooked chicken breasts, chopped
  • 6 ounces cooked tofu, cubed

Directions

  1. Cook pasta according to package directions. Combine the peanut butter, soy sauce, and sriracha in a small bowl. One minute before you drain the pasta, add the carrots and broccoli to the pot. Drain and add the pasta, vegetables, your choice of protein and sauce to the pot. Heat through and serve.

  2. Makes 2 one cup servings.
