Soda Bread

Ingredients

  • 1/4 c. butter, at room temperature
  • 4 c. all-purpose flour
  • 1 tsp. salt
  • 3 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 c. sugar
  • 1/2 tsp. cardamom (or coriander)
  • 1 3/4 c. evaporated milk (or buttermilk)
  • 2 eggs, beaten
  • 2 c. golden raisins (optional)

Directions

  1. In a large bowl, cut butter into 1 cup flour with a fork.

  2. Add the remaining flour, salt, baking powder, baking soda, sugar, and cardamom.

  3. In a separate bowl, mix the evaporated milk, eggs, and raisins.

  4. Add egg mixture to the flour bowl; stir thoroughly.

  5. Turn out onto a floured board. Knead the dough 2-3 minutes. Cut the mass in half with a knife you’ve sprayed with nonstick cooking spray. Shape each half into something round.

  6. Coat 2 (9") pie plates with nonstick cooking spray. Put the dough inside the pie plates; press it down and use a sharp knife to cut a 1/2" deep “X” on the tops. (You might have to spray the knife again to keep it from sticking.)

  7. Bake @ 375 degrees for 40 minutes. Let cool on a wire rack to room temperature, turn out onto a breadboard and slice to serve.
