Apple and Date Cake

Moist cake. Nice also as a dessert.

Serves 10 people

Ingredients

  • 1 green apple, peeled, cored and diced
  • 1C dates, chopped
  • 1t bicarbonate of soda
  • 1C boiling water
  • 125g butter
  • 1C caster sugar
  • 1 egg
  • 1t vanilla
  • 1 1/2C plain flour, sifted
  • Topping:
  • 60g butter
  • 1/2C brown sugar
  • 1/2C shredded coconut
  • 2T milk

Directions

  1. Place apples, soda & dates in bowl.

  2. Pour over boiling water, stand until cool.

  3. Cream butter & sugar, blend in egg & vanilla.

  4. Fold flour and fruit mixture into creamed mix.

  5. Spread in greased & lined 23cm springform pan.

  6. Bake at 180oC approx 45 minutes.

  7. Prepare topping:

  8. Combine all ingredients in small saucepan, heat, stirring, until butter is melted & sugar dissolved.

  9. Remove cake from oven, spread topping evenly over top of cake.

  10. Bake further 15 minutes until topping is golden and cake is cooked. Cool in tin.
