Cold Tea Fruit Loaf

Easy & popular, low fat loaf

Cook time: 45 minutes
Serves 12 people

Ingredients

  • 500g dried fruit
  • 1C brown sugar
  • 1C cold tea (or coffee)
  • 2C self raising flour
  • 1 egg, beaten

Directions

  1. Put fruit, sugar and coffee in bowl, stand 2 hours for fruit to plump up.

  2. Add flour & egg, mix until combined.

  3. Cook in lined loaf tin at 150oc, fan bake, approx 45 minutes.
