Ceasar chicken with orzo pasta dish

Use frozen beans and corn (z hates cooked carrots)

Serves 4 people

Ingredients

  • 1 tbl vegetable oil
  • 4 boneless skillness chicken breasts (1 1/4 lb)
  • 1 can (14 oz) chicken broth
  • 1 cup water
  • 1 cup (6 oz) orzo pasta- uncooked
  • 1 bag frozen vegetables (1 lb) carrots, green beans etc.
  • 3 tbl caesar dressing
  • 1/8 tsp pepper

Directions

  1. In 10 inch skillet, heat oil over medium high heat

  2. Pound chicken if thick

  3. Cook chicken 15 min, turning once, till brown (recipe said 10 min, but not enough.)

  4. Remove chicken and keep warm

  5. Add broth and water to skill, heat to boiling

  6. Stir in pasta, heat to boiling

  7. cook uncovered 8-10 minutes, stirring occassionally till pasta is tender

  8. Stir in frozen veggys and dressing. Add Chicken

  9. Sprinkle with pepper

  10. Heat to boiling, reduce heat.

  11. Simmer uncovered for 5 min or until veggy are crisp-tender and juice of chicken is no longer pink in center
