Broccoli Souffle

Ingredients

  • 1/2 cup mayo
  • 1/4 cup flour
  • 1 1/2 cups milk
  • 1 teaspoon salt
  • 1-3 oz parmesan cheese
  • 1-10 oz broccoli
  • 4 eggs

Directions

  1. Cook mayo, flour, and milk.

  2. Add salt and cheese.

  3. Cook till cheese melts.

  4. Cool slightly.

  5. Stir in broccoli and 4 slightly beaten egg yolk.

  6. Fold in4 stiffly beaten egg whites.

  7. into 1 1/2 quart casserole for 1 hr. at 350.
