Dijon and mushroom chicken breasts

Cook time: 20 minutes
Serves 4 people

Ingredients

  • 4 boneless chicken breasts (1 1/4 lb)
  • 1/4 cup flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbl olive oil
  • 1/2 cup chicken broth (need to double??)
  • 1 1/2 tbl dijon mustard
  • 1 jar sliced mushrooms (4.5 oz)
  • chopped fresh thyme

Directions

  1. Flatten/ pound chicken to 1/4 inch

  2. mix salt, pepper and flour

  3. heat oil on medium hight heat

  4. coat chcken with flour stuff

  5. Cook 6-8 minutes, turning once, till not pink in middle

  6. Remove and keep warm

  7. Stir broth into skillet

  8. Heat to boiling

  9. Stir in mustard and mushrooms

  10. cook 2-3 minutes, until slightly thickened

  11. Spoon over chicken and sprinkle with thyme
