Lazy Chiles Rellenos

This dish is good for brunch, but could also be used as a sid dish for a southwestern style dinner.

Ingredients

  • 2 C. whole milk
  • 5 eggs
  • 1/2 t. paprika
  • 1/4 t. cayenne pepper
  • Salt and pepper
  • 12 roasted, peeled, seeded green chiles (can use canned whole chiles)
  • 1 1/2 C. grated Monterey Jack
  • Warm corn tortillas, for serving

Directions

  1. Preheat the oven to 325°. Spray a 9X13” baking dish with cooking spray.

  2. Mix together the milk, eggs, paprika, cayenne and sprinkle with salt and pepper.

  3. Cut the chiles in half and add a single layer them on the bottom of the baking dish. Top the chiles with half the cheese. Repeat with another layer of chiles and another layer of cheese.

  4. Pour the egg mixture over the top.

  5. Place the baking dish in a larger baking dish or on a rimmed baking sheet. Pour in 1/2” of water and bake until completely set, 35 to 45 minutes.

  6. Cut into squares and serve with warm corn tortillas.
