Fruit and Nut Granola Bars

Have found using a fork to mix and press into pan instead of using hands helps eliminate mess.

Ingredients

  • 2 cups quick-cooking oats
  • 1/2 cup packed dark brown sugar
  • 1 cup whole-wheat flour
  • 1/2 cup wheat germ
  • 2 tsp. salt
  • 1/2 cup golden raisins
  • 1/2 cup finely chopped dried apples
  • 1/2 cup chopped walnuts
  • 1/3 cup maple syrup
  • 1 large egg
  • 1/2 cup vegetable oil
  • 1 Tbsp. vanilla extract

Directions

  1. Preheat oven to 350F. Line a 9×13 inch baking pan with foil; mist foil with cooking spray.

  2. In a large bowl, mix oats, brown sugar, flour, wheat germ, cinnamon and salt, breaking up any lumps of brown sugar. Toss in raisins, apples and nuts. In a separate bowl, whisk maple syrup, egg, oil and vanilla. Pour maple syrup mixture into oat mixture and combine well, using your hands.

  3. Press mixture into baking pan and bake until just turning golden brown around edges, 30 to 35 minutes. Place on a wire rack to cool for 5 minutes. Using a sharp knife, cut into bars in pan while still warm. Let cool further before removing from pan to rack to cool completely.

  4. Makes 18 bars.
