Mashed Cauliflower

This is a good substitute for potatoes if you are on a carb-restricted diet (use light cream cheese if you are.)

Ingredients

  • 1 head cauliflower, cut into florets
  • 4 oz. cream cheese, softened
  • 1 garlic clove, minced
  • Salt and pepper, to taste

Directions

  1. Cook/steam cauliflower until very soft; drain. Add the cream cheese and garlic and mash until light and fluffy. Add salt and pepper to taste.
