Beef Barley Soup

Ingredients

  • 1 tablespoon oil
  • 1 pound beef steak (marinating steak) 1/2" thick in cubes
  • 8 cups water
  • 1 14oz can stewed tomatoes
  • 1 cup carrots peeled and sliced
  • 1 cup chopped onion
  • 1 cup sliced celery
  • 1/2 cup barley
  • 2 pkg Bovril
  • 1/4 cup chopped parsley
  • salt and pepper

Directions

  1. Over medium heat, cook beef cubes in oil until brown.

  2. Add 8 cups water.

  3. Cover and simmer for 1 hour until tender.

  4. Remove beef and shred with 2 forks.

  5. Return to pot and add remaining ingredients.

  6. Cover and simmer for at least and hour.

  7. Add more Bovril if desired.
