Asparagus with Lemon Aioli

Ingredients

  • 1 bunch asparagus (ends trimmed)
  • 1 egg yolk
  • 1/2 t dijon mustard
  • 3/4 cup olive oil
  • 1 T fresh lemon juice
  • 1/4 t kosher salt
  • 1 lemon cut in wedges

Directions

  1. Bring a suacepan of water to boil.

  2. Boil asparagus 1-4 min til tender. Transfer to ice water.

  3. Meanwhile mix other ingredients into aioli.

  4. Serve with lemon wedges.
