Chicken Pistachio Salad

Ingredients

  • 1/2 c pistachios, ground
  • Salt
  • pepper
  • 4 chicken breasts
  • 2 T olive oil
  • 1/2 c diced sweet white onion
  • 1 head romaine
  • Dressing:
  • 1 t grated sweet onion
  • 1 large avocado
  • 3 T olive oil
  • 3 T lime juice
  • 1 T water

Directions

  1. eheat oven to 375.

  2. Mix the nuts in pie plate w salt and pepper.

  3. Press chicken into them and cook in skillet with oil.

  4. Put in baking dish, bake 15 min.

  5. Use the skillet oil to saute the onions.

  6. Serve chicken over lettuce and dressing.

  7. To make dressing: puree ingredients in a blender.
