Lentil quinoa pilaf

  • 2 green onions, sliced thinly, divided in half
  • 1 garlic clove, minced
  • 2/3 cup lentils
  • 1/3 cup quinoa
  • 2 cups vegetable broth
  • 1/2 large lemon, sliced thinly
  • 1 generous pinch saffron


  1. In a medium sized pot, over medium heat, saute half of the green onions and garlic, for approx 2-3 minutes.

  2. Add the lentils and quinoa, and cook for 1 more minute.

  3. Add the vegetable broth, turn the heat down to low, cover the pot and simmer for 15 minutes.

  4. Add the lemon slices to the pot, recover and cook for 5 more minutes.

  5. Remove from the heat. Mix in saffron, recover the pot and let sit for 5 more minutes.

  6. Garnish with the remaining green onions before serving.
