Tex Mex Bean Dip with chips

Ingredients

  • 4 8 inch whole wheat tortillas, cut into 8 wedges each
  • 1 15 oz can black soybeans, rinsed and drained
  • 4 oz reduced fat cream cheese, cubed
  • 1/2 c hot salsa
  • 1 T fresh lime juice
  • 1 t cumin
  • 1/2 t chili powder
  • 2 T shredded cheddar

Directions

  1. Bake tortillas at 350 for about 12 min.

  2. Blend all ingredients except for tortillas and cheese and transfer to skillet.

  3. Heat over med low, stirring constantly until hot.

  4. Transfer to serving dish and sprinkle with cheese.

  5. Serve with the tortilla chips.
