Stuffed bell peppers

Ingredients

  • coconut oil
  • 6 green onions, chopped
  • 1/2 lb. ground beef
  • 1.5 tsp. cumin
  • 2 cloves garlic
  • 3 cups rice
  • 1 small can roasted green chilies
  • 2 cups shredded cheese
  • salt
  • 4 bell peppers, cut in half lengthwise and de-seeded
  • sour cream

Directions

  1. Pre-heat oven or grill.

  2. Cook the onions and beef in the melted coconut oil. Add cumin and garlic. Add rice, chilies and cheese.

  3. Cut up peppers. If using the grill, cook the inside first, empty, and then turn and fill with topping and cook them right-side-up. Top with cheese and sour cream.
