Sweet Potato Soup

Ingredients

  • 2 med sweet potatoes, peeled and cut into 1 inch cubes.
  • 1 large onion
  • 2 cloves garlic (or 1/2 t granulated garlic)
  • 1 bay leaf
  • salt to taste
  • 1 t thyme
  • 1/8 t cayenne
  • 2 c chicken broth
  • 1 c low fat buttermilk
  • 1 c skim milk
  • 1 c ham, chopped
  • 1 T lime juice (1/2 fresh lime)
  • 3 T chopped fresh cilantro (optional)

Directions

  1. In large pot, combine potatoes, onion, garlic, bay leaf, salt, thyme, cayenne, and chicken broth.

  2. Bring to a boil, reduce heat, and simmer, covered, for 15 min or until the sweet potatoes are tender.

  3. Remove the bay leaf.

  4. Pour the soup in a blender or food processor and blend until smooth.

  5. Return the soup to the pan, add the buttermilk, milk, ham, and lime juice and heat gently.

  6. do not boil

  7. Serve once hot, sprinkling each serving with cilantro if desired.
