Goulash Soup

Ingredients

  • 700g lean chuck steak
  • 25g butter
  • 225g Onions, chopped
  • 1 small green pepper, seeded and chopped
  • 4 tomatoes, skinned and quartered
  • 150g tomato puree
  • 600ml rich beef stock
  • 1 tbsp paprika
  • 450g potatoes, peeled
  • 150ml Sour Cream
  • salt & ground pepper

Directions

  1. Wipe meat with damp cloth. Remove excess fat, cut into small pieces. Season well with salt and pepper to taste.

  2. Melt butter in large pan, add the onions and green pepper. Saute until tender.

  3. d meat, tomatoes and puree, stock and paprika. Stir well and bring to boil, then reduce heat, cover pan and simmer for 2.5 hours, stirring occasionally.

  4. Half hour before end of cooking, cut the potatoes into bite-sized pieces, bring to boil in lightly salted water and simmer til cooked. Drain well and add to soup.

  5. Check the seasoning and stir in 2 tbsp soured cream. Ladle into warmed bowls.
