Cream De Menthe Squares

Ingredients

  • 1 1/4 cup butter or margarine
  • 1/2 cup unsweetened cocoa
  • 3 1/2 cups sifted powder sugar
  • 1 beaten egg
  • 1 tsp vanilla
  • 2 cups graham cracker crumbs
  • 1/3 cup green creme dementh syrup
  • 1 1/2 cup semi sweet chocolate chips

Directions

  1. 1st layer:

  2. In a saucepan, combine 1/2 cup of the butter & cocoa powder. Heat & stir until well blended. Remove from heat & add 1/2 cup powered sugar, the egg & vanilla. Stir in graham cracker crumbs. Mix well. Press firmly into the bottom of the pan.

  3. Middle layer:

  4. Melt another 1/2 cup of butter. In a small mixing bowl, combine melted butter & creme dementhe. At low speed, beat in remaining 3 cups of powdered sugar till smooth. Spread over chocolate layer. Chill 1 hour.

  5. Top layer:

  6. In a small pan, melt 1/2 cup butter & chocolate pieces. Cook and stire until melted. Spread over mint layer. Chill 1-2 hours and cut into 1" squares. Keep refrigerated.
