Olive Oil French Fries

Ingredients

  • 4-6 potatos (cut into strips)
  • 1 cup Olive oil
  • Black pepper
  • Optional:
  • Lawry's seasoning salt
  • Garlic powder
  • Chili powder
  • Cheese

Directions

  1. Cut potatoes into strips.

  2. If you like, soak them in cold water for 20 minutes to remove some of the surface starch. Pat them dry thoroughly. It is dangerous to put wet potatoes into hot oil. It can cause spattering.

  3. Put the oil into a pot.

  4. Put enough potatoes in to fill the pot half way.

  5. Heat the olive oil to 325°F (163°C) and cook the potatoes in small batches until they are limp and starting to brown slightly around the edges.

  6. Remove them and place them on a paper towel until they cool to room temperature, so you don’t burn your tongue.

  7. You can use extra virgin olive oil or light olive oil for frying. The light olive oil is less expensive and has a higher smoke point. The extra virgin olive oil is healthier and tastes better.
