Chicken Rice Dish

Ingredients

  • 2 c. water
  • 2 c. cut fresh asparagus (1-inch diagonal pieces)
  • 1 package (6 oz.) long grain and wild rice mix
  • 1/4 c. butter, divided
  • 3/4 lb. boneless skinless chicken breasts, cut into 1-inch strips or cubes
  • 1 tsp. minced garlic
  • 1/4 tsp. salt
  • 1 med. carrot, shredded (or substitute 1/2 c. pre-grated carrot, avail. in bags at HEB)
  • 2 T. lemon juice
  • 1/2 tsp. grated lemon peel (optional)

Directions

  1. In a large saucepan, combine the water, asparagus, rice mix with contents of seasoning packet and 2 tablespoons butter.

  2. Bring to a boil; reduce heat.

  3. Cover and simmer for 10-15 minutes or until the water is absorbed.

  4. Meanwhile, in a large skillet, sauté the chicken, garlic and salt in remaining butter until juices run clear.

  5. Add the carrot, lemon juice, and lemon peel if desired;

  6. cook and stir for 1-2 minutes or until heated through.

  7. Stir into rice mixture.
