Crock Pot Roast

My toddler loves this meal—it is simple and fairly cheap to make, especially if you find a good sale on a roast. Makes great leftovers!

Cook time: 360 minutes
Serves 6 people

Ingredients

  • One beef or pork roast
  • 6-8 medium unpeeled potatoes, sliced into quarters
  • 1 medium onion, diced
  • 1 16 oz. bag baby carrots
  • 1 16-20 oz. can beef broth
  • 1 16-20 oz. can whole or chopped tomatoes (or fresh if you prefer), undrained
  • Salt and pepper to taste (optional)
  • Garlic to taste (optional)

Directions

  1. Add tomatoes, potatoes, onion, and carrots to crock pot.

  2. Add roast, on top of vegetables.

  3. You may pile excess vegetables around the roast to make room for the roast if necessary.

  4. Season top of roast with salt/pepper/garlic if desired.

  5. Pour beef broth around roast, careful not to pour it on the roast, so that the seasonings stay on top of the roast.

  6. Cook on low for 10 hours or high for 5 hours.
